The scientific knowledge on bioactive peptides is progressing very fast in recent years. The aim of this Symposium is to present the latest developments and create the adequate environment for discussing important issues related with bioactive peptides and their health benefits for consumers. The first edition was successfully held in Hangzhou (China) in 2017 and we hope this second edition will continue to grow. Young researchers and (PhD) students are particularly welcome and this will be an excellent opportunity to exchange and discuss their novel results and stimulate new ideas.
The Symposium is grouping invited lectures and communications into 6 major topics dealing with 1) Structural and functional characterization, 2) Absorption and intestinal transport, 3) Physiological mechanisms of action, 4) Generation of bioactive peptides, 5) Advances and challenges in the analysis of bioactive peptides, and 6) Health benefits of bioactive peptides and applications from research to consumer. A special issue with the manuscripts of invited lectures will be published in the Journal of Functional Foods (Elsevier).
Valencia is a wonderful and dynamic city, site of delicious oranges and the worldwide famous paella and other culinary dishes as well as sport events like recent America´s Cup and Formula 1 races. The city is a combination of old history, with remains from roman times, to the modern buildings like the famous City of Sciences designed by the well-known Valencian architect Santiago Calatrava.
